
I found this recipe on the website Our Best Bites, which is full of great recipe ideas in case you ever get stuck in a 'what's for dinner' rut.
This dip has become a fast favorite in our house and is a dish we will be adding to our regular repertoire of go-to recipes. While the dip by itself is delicious, we decided to adapt the recipe and take it a step further by adding grilled chicken to make Greek Pita Wraps. Enjoy!
Greek Dip:
Stuff you'll need:
1 8-oz package of cream cheese, softened
1 tsp fresh dill
3 cloves of garlic, minced
1 lemon, juiced
1 10-oz package of hummus
1 cucumber diced
1 tomato diced
1/2 cup Kalamata olives, chopped
3 green onions, chopped
1/2 cup Feta cheese, crumbled
1/4 cup fresh parsley, minced
Chicken Pita Wraps:
Stuff you'll need:
Greek Dip (recipe above)
3-4 Grilled chicken breasts, diced
Pita pockets
Method:
To make the dip, combine the cream cheese, garlic, dill and lemon juice with an electric mixer. Spread this mixture onto the bottom of a serving platter. Next, add a layer of hummus. Top with cucumbers, tomatoes, olives, green onions, Feta and parsley. Cover and chill for an hour or so before serving. Serve as a dip with pita chips, or if you'd like to make the Chicken Pita Wraps, fill a pita pocket with the dip and add some grilled chicken and you've got yourself a delicious Mediterranean meal.
